Country Soup Recipe

Ingredients
1 cup (250 ml) chicken stock
1 cup (250 ml) beef stock
1/2 cup (125 ml) vegetable juice
3 tbsp (45 ml) butter
1/4 cup (60 ml) zucchini, thinly sliced and quartered
1/4 cup (60 ml) eggplant, diced
1/4 cup (60 ml) sweet red pepper, diced
1/4 cup (60 ml) yellow pepper, diced
Salt and pepper
Directions
– In a saucepan, bring chicken stock, beef stock and vegetable juice to a boil.
– Meanwhile, in a skillet, melt butter and cook vegetables for 2 minutes. Season with salt and pepper. Add vegetables to stock and simmer for 10 minutes. Adjust seasoning and serve.
