Country Italian Soup Recipe
The country Italian soup is a filling beef and vegetable soup. Made with vegetables and macaroni to it, this meaty soup is cooked in a tomato and beef mushroom soup mix. Flavored with added oregano, the country italian soup also has green beans and macaroni in it. served along with meals it is a great addition to your dinner table.
Ingredients
1 tablespoon oil
1/2 pound boneless beef, cut into 1-inch cubes
1 can (14 1/2 ounces) whole peeled tomatoes, undrained and chopped
1 envelope Onion or Beefy Mushroom Soup Mix
3 cups water
1 medium onion, cut into chunks
1 large stalk celery, cut into 1-inch pieces
1/2 cup sliced carrot
1 cup cut green beans
1 can (16 ounces) chick peas or garbanzos, rinsed and drained
1/2 cup sliced zucchini
1/4 cup uncooked elbow macaroni
1/4 teaspoon dried oregano
Directions
In large saucepan or stockpot, heat oil and brown beef over medium-high heat.
Add tomatoes, then onion soup mix blended with water.
Simmer uncovered, stirring occasionally, 30 minutes.
Add onion, celery, carrot and green beans.
Simmer uncovered, stirring occasionally, 30 minutes.
Stir in remaining ingredients and simmer uncovered, stirring occasionally, an additional 15 minutes or until vegetables and macaroni are tender.
Add tomatoes, then onion soup mix blended with water.
