Ingredients
1 10-pound frozen goose, thawed
Paprika
1 13 3/4- to 14 1/2-ounce can chicken broth
2 teaspoons salt
1/4 teaspoon pepper
Water
1 1/2 pounds small white onions
2 medium-sized acorn squash, quartered
Directions
1. Cut goose into 16 pieces. In 12-inch skillet over medium-high heat, cook goose, a few pieces at a time, until browned on all sides. Place pieces in 17 1/4 by 11 1/2" roasting pan; sprinkle lightly with paprika.
2. Pour fat from skillet; discard. Add chicken broth to skillet. Over medium heat, heat broth, stirring to loosen brown bits from bottom of skillet; add salt, pepper, and 1 broth-can water; heat to boiling. Pour broth mixture over goose in roasting pan.
3. Cover pan with foil and bake goose in 350°F. oven 2 hours, stirring once or twice. Add onions and acorn squash to roasting pan; cover and bake 1 1/2 hours longer or until goose and vegetables are tender, stirring once or twice.
