Country Chicken Patties Recipe

This Country Chicken Patties is super yummy ! I would rather eat one of these Country Chicken Patties over regular chicken patties. Try this simple Country Chicken Patties recipe once and I feel sure you'll find them delicious as well as a dish that can be made when in a rush.

Ingredients

 
2 whole large chicken breasts, skinned, boned, and cut into 1-inch chunks
 
3/4 cup dried bread crumbs
 
3 tablespoons mayonnaise
 
1 tablespoon minced parsley
 
1 tablespoon dry sherry
 
2 teaspoons grated onion
 
1/4 teaspoon pepper
 
1 egg
 
Water
 
Salt 1/4 cup salad oil
 
1 medium-sized head iceberg lettuce, sliced
 
1 cup frozen peas

Directions

1. Using meat grinder with medium cutting disk or food processor with knife blade attached, coarsely grind chicken meat.
2. In large bowl, mix ground chicken, bread crumbs, mayonnaise, parsley, sherry, onion, pepper, egg, 1/4 cup water, and 3/4 teaspoon salt. With hands, shape chicken mixture by table-spoonfuls into 1 1/2-inch round patties.
3. In 12-inch skillet over medium-high heat, in hot oil, cook chicken patties, a few at a time, until golden (about 3 minutes on each side). Remove patties to plate; keep warm.
4. To drippings remaining in skillet, over medium-high heat, add lettuce, stirring to coat with drippings. Add 3/4 cup water and 1/2 tea spoon salt; cook 3 minutes. Add frozen peas; cook 5 minutes. Serve patties on lettuce and peas.
