Traditional Country Captain Recipe

Ingredients

 
Sauce
 
1 large onion, chopped
 
1 garlic clove, crushed
 
1 large green pepper, chopped
 
1 tablespoon Worcestershire sauce
 
1 teaspoon curry powder
 
1 teaspoon thyme
 
1 teaspoon salt
 
1 teaspoon black pepper, freshly ground
 
1 cup canned tomatoes
 
1/2 cup tomato puree
 
1 can (4 oz.) mushrooms
 
1/2 cup currants or raisins
 
1/4 pound blanched and toasted almonds

Directions

Fry onion, garlic, green pepper in chicken drippings until tender but not brown.
Add all seasonings and tomatoes.
Stir over low flame until well-blended.
Pour sauce over chicken pieces, adding mushrooms and cook at 350° for 1 hour.
Fifteen minutes before serving, add currants and toasted almonds over top.
When ready to serve, pour chicken over hot cooked rice.
