Country Captain Recipe
Ingredients
| 2 broiler-fryers (about 2 1/2 pounds each) | ||
| All purpose flour | 1/4 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Vegetable oil | 3 Tablespoon | |
| Onion | 1 Large, chopped | |
| 1 large green pepper, halved, seeded, and chopped | ||
| 1 large clove of garlic, crushed | ||
| Curry powder | 1 Tablespoon | |
| Tomatoes | 1 Can (10oz) | |
| 1/2 cup raisins or currants | ||
| Hot cooked rice | ||
Directions
MAKING
1 Cut chicken into serving-size pieces.
2 In a plastic bag,combine flour with 1 teaspoon of salt and 1/4 teaspoon of pepper.Shake the chicken, a few pieces at a time, in the flour mixture to coat; tap off the excess.
3 In a heavy kettle or dutch oven,heat oil and brown the chicken,part at a time.Remove the chicken and keep warm.
4 To the drippings remaining in the kettle, add onion, green pepper, garlic, and curry powder; saute until soft. Add tomatoes (breaking with spoon), raisins, and reserved chicken. Cover and simmer for 1 hour, or until the chicken is tender.
SERVING
5 Arrange chicken on a bed of rice and spoon sauce over the top.
