Cottage Cheese Spinach Recipe

Ingredients
1 10-oz (284 g) bag fresh spinach, chopped
1 cup (250 mL) cottage cheese
2 eggs, lightly beaten
3 tbsp (50 mL) Cheddar cheese, grated
3 green onions, chopped fine
1/2 tsp (2 mL) dill weed or savory
2 tbsp (30 mL) butter
1/4 cup (60 mL) breadcrumbs
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper

Directions
Mix in a bowl the spinach, cottage cheese, eggs, 2 tablespoons of the grated cheese, green onions, dill or savory.
Stir until well mixed.
Pour into a 9-inch (23 cm) microwave-safe pie plate, cover with plastic wrap or a lid.
Microwave 4 to 5 minutes at MEDIUM.
Remove wrap or lid.
Place butter in a microwave-safe bowl and melt 1 minute at HIGH.
Add breadcrumbs, remaining grated cheese, salt and pepper.
Mix together and sprinkle on top of spinach.
Sprinkle with paprika.
Microwave at MEDIUM-HIGH 3 to 4 minutes.
Serve.
