Cottage Cheese And Salmon Flan Recipe

The Cottage Cheese And Salmon Flan is one of the dishes which often finds a place on my Labor Day celebration menu. It packs in the richness of pink salmon, mayonnaise, chives and dried dill. Just give this rich and flavorsome salmon flan a try and watch out for the praises coming your way.

Ingredients

 
1 75 g/6 oz/1 1/2 cups plain flour
 
Pinch of salt
 
75 g/3 oz/1/3 cup hard margarine, cut into pieces
 
Cold water, to mix
 
FILLING:
 
200 g/7 oz/1 small can of pink salmon
 
10 ml/2 tsp mayonnaise
 
2.5 ml/1/2 tsp dried dill
 
5 ml/1 tsp capers, chopped
 
1 egg
 
150 ml/1/4 pt/2/3 cup milk
 
100 g/4 oz/1/2 cup cottage cheese
 
15 ml/1 tbsp snipped chives
 
TO SERVE:
 
Coleslaw

Directions

Sift the flour and salt into a bowl.
Add the margarine and rub in with the fingertips until the mixture resembles breadcrumbs.
Mix with enough cold water to form a firm dough.
Knead gently on a lightly floured surface.
Roll out and use to line a 20 cm/8 in flan tin (pie pan).
Drain the salmon.
Discard any bones and skin, then flake and mix with the mayonnaise, dill and chopped capers.
Spread in the base of the flan case (pie shell).
Beat the egg, milk and cottage cheese together and season lightly.
Pour into the flan and sprinkle with the chives.
Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 40 minutes until set.
Leave to cool.
Wrap in foil.
