Ingredients

 Lean bacon slice3 , diced
 1/3 cup chopped sweet green pepper
 Sweet red pepper1/3 Cup (16 tbs), chopped
 1/4 cup chopped yellow onion
 Potatoes4 Large, peeled
 Rosemary leaves1 Tablespoon, minced
 Salt1/2 Teaspoon
 Black pepper1/4 Teaspoon

Directions

1. In a heavy 12-inch skillet (preferably a cast iron one), cook the bacon over moderately high heat for 5 minutes or until crisp. Using a slotted spoon, transfer to paper towels to drain.
2. Pour off all but 2 tablespoons of the bacon drippings from the skillet. Add the green and red pepper and onion and saute for 5 minutes or until tender. Stir in the potatoes with the bacon, rosemary, salt, and black pepper.
3. Lower the heat to moderately-low. Using a metal spatula, press the potatoes into an even layer. Cook, turning and pressing down several times, for 10 minutes or until the potatoes are nicely browned and crisp. Serve with This Is It! Meat Loaf.
