Cottage Cheese Spring Salad Recipe
Ingredients
| Cottage cheese | 1 Pound | |
| Parsley | 1 Tablespoon, chopped | |
| 1 tablespoon chopped fresh mint or 1-1/2 teaspoons dried mint | ||
| 1 tablespoon chopped chives or green-onion tops, or 1-1/2 teaspoons dried chives | ||
| 4 large or 8 small pitted black olives, chopped | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
| Ham | 1 Cup (16 tbs), diced | |
| Cucumber | 1 , diced | |
| 1 head lettuce or 1 head endive | ||
| Black olives | ||
| Mint or parsley sprigs | ||
Directions
MAKING
1. In a medium bowl into cottage cheese stir in parsley, mint, chives or green-onion tops and chopped olives.
2. Season with salt and pepper and let it stand for 15 minutes if using dried herbs.
3. Into cottage-cheese mixture stir ham and cucumber.
SERVING
4. Serve immediately, or cover and refrigerate up to 8 hours.
5. To serve, in a bowl arrange lettuce or endive leaves or on a serving platter spoon cottage-cheese salad in center.
6. Garnish with olives and mint or parsley sprigs.
