Ingredients

 Cottage cheese1 Pound
 Parsley1 Tablespoon, chopped
 1 tablespoon chopped fresh mint or 1-1/2 teaspoons dried mint
 1 tablespoon chopped chives or green-onion tops, or 1-1/2 teaspoons dried chives
 4 large or 8 small pitted black olives, chopped
 Salt To Taste
 Ground pepper1 To taste
 Ham1 Cup (16 tbs), diced
 Cucumber1 , diced
 1 head lettuce or 1 head endive
 Black olives
 Mint or parsley sprigs

Directions

MAKING
1. In a medium bowl into cottage cheese stir in parsley, mint, chives or green-onion tops and chopped olives.
2. Season with salt and pepper and let it stand for 15 minutes if using dried herbs.
3. Into cottage-cheese mixture stir ham and cucumber.

SERVING
4. Serve immediately, or cover and refrigerate up to 8 hours.
5. To serve, in a bowl arrange lettuce or endive leaves or on a serving platter spoon cottage-cheese salad in center.
6. Garnish with olives and mint or parsley sprigs.
