Cottage Cheese Potato Salad Recipe
Cottage cheese potato salad is a vegetable and cottage cheese salad prepared with eggs. Tossed together with the curd cream cottage cheese, the cotage cheese potato salad is chilled to serve.
Ingredients
| 3 hard cooked eggs | ||
| 4 cups cooked, sliced, cooled potatoes | ||
| Celery | 1 Cup (16 tbs), diced | |
| 1 cup large curd cream style cottage cheese | ||
| Mayonnaise | 3/4 Cup (16 tbs) | |
| Radishes | 1/2 Cup (16 tbs), sliced | |
| Green pepper | 1/2 Cup (16 tbs), diced | |
| Green onions | 1/2 Cup (16 tbs), sliced | |
| Salt | 2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Ripe olives | ||
Directions
Set aside 1 egg for garnishing.
Chop 2 eggs; mix with remaining ingredients except olives.
Chill.
Garnish with egg slices and olives.
