Cottage Cheese Pancakes with Applesauce Recipe
Ingredients
| Eggs | 3 | |
| 1 cup small-curd cottage cheese | ||
| Salad oil | 2 Tablespoon | |
| All purpose flour | 1/4 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Applesauce | 1 Cup (16 tbs) | |
| Powdered sugar | ||
| Ground cinnamon | ||
Directions
Break eggs into blender or food processor container.
Add cottage cheese and whirl until blended.
Add oil, flour, and salt; whirl until mixture is almost smooth.
Preheat a griddle or large frying pan over medium heat; grease lightly.
Pour batter, about 1/4 cup for each cake, onto griddle.
Cook until tops are bubbly and appear dry; turn and cook other sides until browned.
While pancakes are cooking, heat applesauce in a small pan over medium heat until heated through.
Spoon 1 or 2 tablespoons of warm applesauce down center of each pancake and roll to enclose.
Sprinkle each filled pancake with sifted powdered sugar and cinnamon.
Pass sour cream at the table to spoon atop pancakes, if desired.
