Cottage Cheese Pancakes Recipe
Ingredients
| Milk | 1 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| 3/4 cup cream-style cottage cheese | ||
| Butter/Margarine | 2 Tablespoon, softened | |
| 1 1-inch square piece orange peel | ||
| 1 1/2 cups packaged pancake mix | ||
| 2 large oranges, peeled and cut in thin cartwheel slices | ||
| Sugar | ||
| Butter or margarine | ||
| Shredded coconut | ||
Directions
Place milk, egg, cottage cheese, butter or margarine, and orange peel in blender container.
Blend till mixture is smooth and orange peel is finely chopped.
Add pancake mix to blender container.
Blend just till pancake mix is moistened.
Bake on lightly greased griddle, using 1/4 cup batter for each pancake.
Makes 12 pancakes.
Heat orange slices in saucepan; sweeten with sugar, if desired.
At serving time, butter the pancakes generously.
Arrange on plates in stacks of three each.
Spoon orange slices over.
Sprinkle coconut on top.
