|Cream style cottage cheese||3⁄4 Cup (12 tbs)|
|Butter/Margarine||2 Tablespoon, softened|
|Pancake mix||1 1⁄2 Cup (24 tbs) (Packaged)|
|Oranges||2 Large, peeled and cut in thin cartwheel slices|
|Sugar||1 Cup (16 tbs)|
|Shredded coconut||1 Cup (16 tbs)|

Blend till mixture is smooth and orange peel is finely chopped.
Add pancake mix to blender container.
Blend just till pancake mix is moistened.
Bake on lightly greased griddle, using 1/4 cup batter for each pancake.
Makes 12 pancakes.
Heat orange slices in saucepan; sweeten with sugar, if desired.
At serving time, butter the pancakes generously.
Arrange on plates in stacks of three each.
Spoon orange slices over.
Sprinkle coconut on top.
