1 8-ounce package wide egg noodles
 
1 8-ounce package sliced bacon, cut into 1-inch pieces
 
4 green onions, chopped
 
3 8-ounce containers creamed cottage cheese
 
3/4 16-ounce container sour cream
 
3 eggs
 
3/4 teaspoon salt
 
1/4 teaspoon cracked pepper
 
2 slices white bread
 
Parsley sprigs for garnish

Directions

1. In saucepot, prepare egg noodles as label directs; drain.
2. Meanwhile, in 12-inch skillet over medium-low heat, cook bacon until browned; drain on paper towels. Spoon off all but 1 tablespoon drippings from skillet; add green onions; cook until tender, stirring occasionally. Remove skillet from heat.
3. Preheat oven to 350°F. Grease 12" by 8" baking dish. Into large bowl, press cottage cheese through fine sieve. Stir in sour cream, eggs, salt, and pepper until blended. Add noodles, bacon, and green onions; toss gently to mix well; spoon into baking dish. Tear bread into small pieces; sprinkle over noodle mixture. Bake, uncovered, 30 minutes or until heated through. Garnish with parsley.
