Cottage Cheese Blender Loaf Recipe
Ingredients
2 cups sifted self-rising flour or 2 cups all-purpose flour sifted with 2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking bowder
3 tablespoons raisins
1/2 cup finely chopped celery
2 eggs
1/4 cup chopped onion
1/4 cup cottage cheese
2 tablespoons soft margarine
1-2 tablespoons milk
Directions
Grease and line a small 4 1/2 x 2 1/2 x 1 1/2-inch loaf pan.
Sift the flour, salt and baking powder into a bowl and add the raisins and chopped celery.
Place the eggs, onion, cottage cheese and margarine in the goblet of a blender and switch on until all the ingredients are smoothly blended.
Stir the blended ingredients into the flour with the milk, and mix thoroughly to give a fairly stiff, dropping consistency.
Spoon the mixture into the prepared pan and smooth the top.
Bake above the center of a moderately hot oven (375°F) for 40-45 minutes until well risen and golden brown.
Cool the loaf in the pan for 15 minutes before turning out onto a cake rack.
