Cottage Cheese And Grapefruit Cups Recipe

| Grapefruit | 2 Large, halved | |
| Lettuce leaves | 8 , washed | |
| Cottage cheese | 12 Ounce | |
| Cucumber | 4 Inch, cut into cubes |
Directions
With a sharp knife, carefully cut around the grapefruit halves between the skin and flesh.
Remove the flesh, discarding membrane and pith, and chop into bite sized pieces.
Line each grapefruit shell with two lettuce leaves.
In a mixing bowl, combine the cottage cheese, cucumber and grapefruit flesh, beating to mix well.
Pile the mixture back into the shells and serve at once.
