Ingredients
14 oz canned beets, drained reserve
1 cup juice
2 envelopes unflavored gelatin
1 cup beef broth
1/4 cup spinach, finely shredded
1 tbsp lemon juice
1/2 cup plain yogurt
Fresh chives, chopped
Directions
In a medium size saucepan, pour beet juice.
Sprinkle with gelatin.
Over low heat stir until gelatin dissolves.
Remove from heat.
Set a side.
In a food processor, combine beets and beef broth.
Process until smooth.
Fold beet puree into gelatin mixture.
Add spinach.
Sprinkle with lemon juice.
Transfer to a soup tureen.
Cover.
Refrigerate until borscht has half set.
Decorate with a swirl of yogurt.
Sprinkle with chopped chives.
