Cornmeal Muffins Recipe
This cornmeal muffins recipe tastes soo superb that I have been trying to find where exactly the secret lies. This cornmeal muffins makes a good snack for most meals. Not trying out this cornmeal muffins after reading about it is one of the biggest crimes you could possibly imagine of committing.
Ingredients
1 cup cornmeal
2 cups whole wheat pastry flour
1 teaspoon soda
1 teaspoon salt
2 eggs
2 tablespoons honey
1 1/3 cups buttermilk
1 1/2 tablespoons melted butter
1 teaspoon sesame seeds
Directions
Preheat oven to 375° F. and grease 3 dozen miniature (or 1 dozen full-size) muffin tins.
Mix cornmeal, flour, soda, and salt.
In another bowl, beat eggs, add honey and buttermilk.
Stir into cornmeal mixture, then add melted butter.
Place about 2 teaspoonfuls of batter in each muffin cup, filling about 2/3 full.
Sprinkle with sesame seeds and bake in preheated oven for 25 minutes.
