Cornmeal Mountain Buttermilk Pancakes Recipe
Ingredients
1 egg
1 1/4 cups buttermilk (or regular milk plus 4 teaspoons vinegar)
1 tablespoon molasses
1/4 cup melted shortening
1 cup unsifted regular all-purpose flour
1 teaspoon salt
1/2 teaspoon soda
2 teaspoons baking powder
1/2 cup yellow cornmeal
Directions
Beat together the egg, milk, molasses, and shortening.
Add the flour, sifted with the salt, soda, and baking powder; add cornmeal, stir just to blend.
Bake on a moderately hot greased griddle.
