Cornish Hens With Wild Rice Dressing Recipe
Cornish hens with wild rice dressing is a complete meal in itself. This meal can be served all alone or with a salad. The wild rice dressing only adds to the taste. Enjoy the Cornish hens with wild rice dressing for a relaxing dinner after a long day.
Ingredients
Wild rice-1/2 cup
Sliced mushrooms-1, (4-ounces) can
Onion-1 small, chopped
Celery-1/2 cup, diced
Butter-1/2 cup
Pimento-2 tablespoons, chopped
Cornish hens-4, 1 pound
Salt-2 teaspoons
Directions
MAKING
1)In a saucepan, add 1 1/2 cups water and rice. Bring to a boil.
2)Cook for 40 minutes or until rice is tender.
3)In a pan, heat ΒΌ cup butter and saute mushrooms, onion and celery lightly.
4)In a large bowl, mix rice, mushroom mixture and pimento together.
5)Rub cavities of hens with salt and fill the mixture into it.
6)Seal the vents with skewers and tie wings.
7)Take a roasting pan, and put the hens with breast side up on rack.
8)Lightly brush them with butter.
9)Bake at 350 degrees for about 1 hour and 30 minutes, basting frequently with drippings.
SERVING
10)Serve the Cornish hens with wild rice dressing hot.
