Cornish Hens With Mandarin Orange Rice Recipe
Ingredients
4 1 1/4-pound Cornish game hens
2 tablespoons chopped celery
1 tablespoon margarine or butter
2 cups hot cooked rice
1 11-ounce can mandarin orange sections drained
1/4 cup slivered almonds, toasted
1 small green onion, thinly sliced
2 tablespoons orange juice concentrate
1/4 teaspoon salt
1 tablespoon cooking oil
1/4 teaspoon paprika
1/4 cup orange marmalade
Directions
Thaw Cornish game hens, if frozen.
For stuffing, in a medium skillet cook celery in margarine till tender.
Remove from heat.
Stir in rice, oranges, almonds, onion, orange juice concentrate, and salt.
Set aside.
Rinse Cornish game hens and pat dry.
Lightly stuff hens with rice mixture and tie legs with string.
Lightly brush hens with oil; sprinkle with paprika.
Wrap any remaining stuffing in double thickness of heavy foil.
Place hens, breast side up, in center of the cooking grill.
Grill about 1 hour or till tender and no longer pink.
Place foil packet of stuffing on cooking grill the last 30 minutes of grilling time.
Baste hens with orange marmalade during the last 15 minutes of grilling time.
Transfer hens and extra stuffing to a serving platter.
