 Garlic1 Clove (5 gm)
 Fresh parsley1 Teaspoon (for sprinkling)
 Onions2 Medium, diced (peeled)
 Mushrooms2 Cup (32 tbs), sliced
 Olive oil1⁄4 Cup (4 tbs)
 Chardonnay1⁄2 Cup (8 tbs) (or a little more as it burns off)
 European butter stick1⁄4 (adds a smooth taste)

 Seasonings To Taste

 Ground fresh pepper To Taste

Directions

Butter the Cornish Hens with European Butter-season over with fresh pepper, garlic, salt and parsley. Stick cloves of fresh garlic inside cornish hens. Roast until done about 50 mins at 350.

Sauce:
Mix all dry ingredients into bowl, and saute on med- low heat with liquid ingredients.
Add the Chardonnay last.
This receipe is great as a side order especially with Cornish Hens, Steak and if you really want some excitement add to your favorite- (Angus Beef Burger). For extreme flavor- add sliced red, green and yellow peppers.
