Ingredients
2 Rock Cornish hens
Salt and pepper
2 tablespoons shortening
1/2 cup raisins
2 tablespoons lemon juice
1/2 teaspoon allspice
1/2 cup chicken broth
1/2 cup red currant jelly
Directions
Sprinkle the hens amply with salt and pepper.
Heat shortening in pressure cooker and brown the hens.
Add raisins, lemon juice, allspice, and chicken broth.
Close cover and set pressure regulator in place.
When pressure is reached, cook for 8 minutes.
Allow to cool normally.
Remove hens and blend jelly with the sauce in cooker, stirring constantly.
Brush the sauce over the hens.
To crisp them, put hens under a broiler for 2 minutes.
Serve.
