All-purpose flour-1/4 cup
 
Salt-4 teaspoons
 
Pepper-1 teaspoon
 
Cornish hens-3, halved
 
Butter-6 tablespoons
 
Pinch of marjoram
 
Pinch of thyme
 
Pinch of sage
 
Chili powder-3/4 teaspoon
 
Paprika-3/4 teaspoon
 
Sherry-2 tablespoons
 
Parsley-1 cup, chopped

Directions

MAKING
1)In a paper bag, add flour, salt and pepper.
2)Dredge hens in flour mixture to coat evenly.
3)In a heavy skillet or Dutch oven, melt butter and add marjoram, thyme, sage, chili powder and paprika.
4)Heat butter mixture until bubbly and then add hens.
5)Brown evenly on all sides. Cover skillet tightly and cook on low heat until hens are tender.
6)Place the hens on heated platter.
7)Stir in sherry to skillet and stir to loosen brown particles.
8)Add parsley and cook for 2 minutes.

SERVING
9)Pour sauce over hens and serve hot.
