Cornish Hens Tarragon Recipe
Ingredients
| 6 frozen Cornish hens | ||
| Butter margarine | 3/4 Cup (16 tbs) | |
| Dry white wine | 3/4 Cup (16 tbs) | |
| Tarragon | 2 Tablespoon | |
| Garlic | 6 Clove (5gm) | |
| Garlic salt, salt and pepper | ||
Directions
Let Cornish hens thaw overnight in refrigerator; save giblets.
Melt butter or margarine; add the wine, one tablespoon of the tarragon and garlic.
Use this sauce to baste frequently.
Stuff each hen with 1/2 t.of tarragon, and sprinkle inside with 1/4 t.salt, 1/8 t.pepper and 1/8 t.garlic salt.
Bake in 450 degree oven 45 minutes to 1 hour (depending upon size) being sure to baste often.
Serve garnished with watercress or parsley if desired.
The giblets can be used to make a dressing, preferably with wild rice and place in a casserole.
