Ingredients
2 1-pound or 1 2-pound fresh or frozen (thawed) Rock Cornish hens
2 tablespoons all-purpose flour
2 tablespoons salad oil
1 medium-sized onion, sliced
1/4 cup water
2 tablespoons soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 small head iceberg lettuce, coarsely sliced
1 10-ounce package frozen peas
Directions
1. Remove giblets and necks from hens. (If using 1 large hen, cut in half.) Rinse hens with running cold water; pat dry with paper towels; coat lightly with flour.
2. In 4-quart Dutch oven over medium-high heat, in hot salad oil, cook hens until well browned on all sides. Add onion, water, soy sauce, salt, and pepper, and if you like, add giblets and necks; heat to boiling. Reduce heat to low; cover and simmer about 30 minutes or until tender.
3. Add lettuce and frozen peas; cook 5 to 8 minutes longer, stirring vegetables occasionally, until lettuce is tender-crisp.
