 Cornish hen - 1 1/4-pound , skinned and cut into pieces
 Salt1/2 Teaspoon
 Enriched all-purpose flour - 1 tablespoon plus 3/4 teaspoon
 Margarine1 Tablespoon
 Parsley1 Tablespoon, chopped (Garnish)
 Garlic1 Clove (5gm) (Garnish)
 Mushrooms1 Cup (16 tbs), sliced (Garnish)
 Chicken broth3/4 Cup (16 tbs) (Garnish)
 Marsala wine2 Fluid Ounce (Garnish)
 Pepper1 Dash (Garnish)

Directions

GETTING READY
1 Sprinkle salt on the hen and dredge in flour. Set aside.

MAKING
2 In 12-inch nonstick skillet, add margerine and heat until bubbly.
3 Add in garlic, and saute lightly.
4 Add the hen pieces and cook until browned on all the sides.
5 Cover the skillet and cook on low heat for 10 to 15 minutes ,until the hen is tender.
6 Add in the mushrooms and cook for 3 minutes, stirring occasionally.
7 Stir in the broth ,wine, and pepper.
8 Simmer, covered for about 10 minutes.

SERVING
9 Serve hot.
