Cornish Game Hens With Sausages Recipe
Ingredients
| Italian sausage | 4 Pound | |
| Cornish game | 4 Pound | |
| Olive oil | 2 Tablespoon |
Directions
1. Preheat oven to 475°. Cut sausage links into 1-inch pieces. In a large frying pan, cook sausages over medium heat 3 minutes, or until partially cooked. Drain and let cool.
2. Rinse hens and pat dry inside and out. Stuff cavities with sausages. Cross bone ends of legs and tie together. Rub skin with olive oil.
3. Place birds in a small roasting pan. Roast 15 minutes. Turn heat down to 350° and roast 45 minutes longer, or until juices run dear when meatiest part of thigh is pierced.
