Corned Beef Stuffed Potatoes Recipe

Ingredients
4 large baking potatoes
1 1/2 cups minced cooked corned beef
1/4 cup butter or margarine
Salt and pepper to taste
1/8 cup minced fresh parsley
4 eggs
Directions
Bake potatoes at 400°F 1 hour or until done.
Cut slice off top of each potato; scoop out centers.
Leave 1/4 to 1/2 inch potato around walls.
Mash potatoes.
Stir in corned beef and butter.
Add salt and pepper.
Divide mixture among potatoes; reheat.
Meanwhile poach eggs.
Sprinkle potato tops with parsley; top with cooked eggs.
