Corned Beef Hash Yankee Style Recipe
Ingredients
| 4 to 5 pounds brisket of corned beef, cooked | ||
| 4 or 5 tablespoons fat | ||
| White onions | 6 Large, diced | |
| Boiled potatoes | 6 Large, peeled | |
| Beets | 1 Can (10oz), diced | |
| Garlic | 1 Clove (5gm), crushed | |
| Butter/Margarine | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Remove excess fat from corned beef, and mince the meat with a sharp knife.
Melt fat in a large, heavy skillet; add onions and saute until they are tender and golden.
Gradually add corned beef and then potatoes, stirring constantly.
Slowly stir in beets and beet juice.
Last, add garlic and butter.
Allow the mixture to simmer gently until it's good and hot and bubbly.
Before serving, taste and add salt and pepper as necessary. (Garlic can be removed before serving, if desired.)
