Ingredients

 
2 eggs, beaten
 
1 (14 ounce) can of whole kernel corn, undrained
 
1 (14 ounce) can of cream-style corn
 
1 tbls sugar
 
1/4 cup melted margarine
 
1 (8 1/2 ounce) box Jiffy Cornbread mix

Directions

Preheat over to 375 degrees.
Spray an 8x8 casserole dish with non-stick cooking spray.
Mix together eggs, whole kernel corn and cream-style corn.
Add sugar, margarine and Jiffy mix. Mix well.
Pour mixture into prepared casserole dish.
Bake for approximately 1 hour.
Refrigerate any leftovers.

Hi ifoodiee! Hope you are doing great! You could use Egg Beaters as a substitute, but if your husband is allergic, that won't work. I have substituted eggs with applesauce before, but not in a baked product, so I'm not sure how the consistency would turn out. I've also seen a banana used in place of 1 egg. Sadly, I haven't tried any subs with this particular recipe. It would definitely be a trial and error to see what works. This is a great recipe though... very moist and delicious! I can eat this on a plate all by itself with butter! LOL, shame on me! If you experiment with this recipe, please let me know how it turns out. I'm really curious about it.
