Ingredients
| Vegetable cooking spray | ||
| 1/4 cup cornflake crumbs | ||
| All purpose flour | 1 Cup (16 tbs) | |
| Yellow cornmeal | 1 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| 1 egg, slightly beaten | ||
| Buttermilk | 1 Cup (16 tbs) | |
Directions
Spray 9-inch ring dish with vegetable cooking spray.
Sprinkle with cornflake crumbs.
Tilt dish to coat.
Set aside.
In medium mixing bowl, combine flour, cornmeal, sugar and baking soda.
Set aside.
Place butter in small bowl.
Microwave at High for 1 1/4 to 1 1/2 minutes, or until butter melts.
Add butter, egg and buttermilk to cornmeal mixture.
Stir just until dry ingredients are moistened.
Pour batter evenly into prepared dish.
Microwave at 50% (Medium) for 5 minutes, rotating dish after half the time.
Increase power to High.
Microwave for 4 to 7 minutes, or until top springs back when touched lightly, rotating dish after every 2 minutes.
Let stand on counter for 5 minutes.
Invert onto serving plate.
