Corn Relish Recipe
Corn Relish was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. This Low Fat dish of Corn Relish is really tasty. I prepare this yum Corn Relish as a Side Dish every month or even more often. In my estimation, if one calls oneself a good cook, one ought to have a personal recipe of Corn Relish, just like I do.
Ingredients
1/2 cup apple cider vinegar
1/4 cup lemon juice
1/4 cup sugar
1/2 teaspoon celery seed
1/2 teaspoon black pepper
1/2 teaspoon mustard seed
4 1/2 cups cooked fresh, frozen, or canned corn kernels
1 large red bell pepper, diced
6 scallions, chopped
Directions
Place vinegar, lemon juice, sugar, celery seed, black pepper, and mustard seed in a medium saucepan and bring to a boil.
Cook for 2 minutes.
Place corn kernels, red pepper, and scallions in a medium bowl.
Pour vinegar mixture over vegetables and stir.
Chill overnight before serving.
