Ingredients

 
6 cups prepared fresh corn or vacuum packed canned corn
 
1 cup chopped mild white onion
 
1 cup chopped celery
 
1 green pepper, chopped
 
1/4 cup chopped pimiento
 
1/2 to 1 cup sugar
 
1 to 1 1/2 tablespoons salt
 
1 teaspoon crushed red pepper
 
1 clove garlic, minced
 
1 teaspoon celery seed
 
1/2 teaspoon ground ginger
 
3 cups white vinegar
 
1 to 1 1/2 tablespoons dry mustard
 
1 teaspoon ground turmeric
 
3 tablespoons flour
 
1/4 cup water

Directions

If using fresh corn-on-the-cob, cook 5 minutes; plunge into cold water to cool thoroughly.
Cut kernels from cobs (do not scrape cobs).
If using canned corn, drain before measuring; set aside.Combine onion, celery, green pepper, pimiento, sugar, salt, red pepper, garlic, celery seed, and ginger in a large kettle; add 2 1/2 cups vinegar and blend well.
Bring mixture to boiling; boil 5 minutes.
Blend thoroughly the dry mustard, turmeric, and flour; stir in the water until smooth, then the remaining 1/2 cup vinegar.
Stir into the hot mixture and cook about 6 minutes.
Continue stirring until liquid is thickened and smooth.
Add the corn; cook and stir 5 minutes longer.
Ladle the hot relish into hot sterilized jars and seal
