Corn-On-The-Cob Recipe

Ingredients

 
1 cup all-purpose flour 250 mL
 
3/4 cup yellow cornmeal 175 mL
 
2 tbsp granulated sugar 25 mL
 
2 tsp baking powder 10 mL
 
3/4 tsp salt 4mL
 
1 egg, beaten
 
3/4 cup milk 175 mL
 
1/4 cup butter or margarine,melted 50 mL
 
1/2 cup cooked corn, cut offthe cob 125 mL
 
2 tbsp minced green onion(optional) 25 mL

Directions

In a large bowl, combine flour, cornmeal, sugar, baking powder and salt.
In a small bowl, combine egg, milk, butter, corn and onion.
Pour into dry ingredients and stir just until moistened and blended.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 20 minutes or until lightly browned.
HINT:
Top hot, baked muffins (or cup cakes) with a marshmellow and put back in oven until marshmallows melt and brown lightly.
