Directions

Drain corn of excess moisture; then measure 1 3/4 cups.
Separate eggs; beat yolks until light and frothy.
Add corn, seasonings, onion and flour.
Beat egg whites until stiff but still glossy; fold into corn mixture.
Heat fat in skillet, and drop mixture in by generous spoonfuls.
Cook over medium heat until well browned; turn, and continue frying until thoroughly cooked.
Fritters are especially good with chicken, ham or crisp bacon.
Accompany fritters with maple syrup or honey.
