Directions

Use 11/2tablespoons melted fat to grease a shallow 29 x 18cm cake tin or twelve 8cm muffin tins. Place in top half of a very hot oven 220C (425F) until sizzling hot. Have all other ingredients at room temperature. Sift flour, baking powder, sugar and salt into a bowl and stir in cornmeal. Beat together egg, milk and remaining butter or bacon dripping, pour into dry ingredients and combine with a few rapid strokes; batter will be lumpy. Turn batter into hot tin or muffin tins and bake in oven for about 25 minutes or until well-risen and browned. Serve immediately, cutting bread into squares
