Corn Bread Muffins Recipe

Ingredients

 
1/2 cup unbleached all-purpose flour
 
1 egg white
 
1 teaspoon baking powder
 
1 cup skim milk
 
1 tablespoon sugar
 
1/4 cup apple sauce
 
1/2 cup corn meal

Directions

1.Preheat oven to 350 degrees. Use nonstick muffin tins, or muffin tins sprayed lightly with vegetable cooking spray, and place tins in oven to warm for 5 minutes before filling.
2.Combine flour, baking powder, sugar, and cornmeal in a mixing bowl.
3.In a separate bowl, combine egg white, milk, and apple sauce.
4.Add wet ingredients to dry ingredients and stir until dry ingredients are just moistened.
5.Spoon batter into warmed muffin tins.
Each tin should be about 2/3 full.
Bake for 12 minutes or until muffins are lightly browned and a wooden toothpick inserted in the center of a muffin comes out clean.
