Fresh Corn And Tilapia Recipe Video
A simple to make Indian Corn and Tilapia recipe. Being born and raised in Jersey, there are just some things that I'll always keep close to my heart.....Jon Bon, Bruce, and ofcourse, corn and tomatoes! What can I say, I guess no matter where I am, I'll always be a Jersey girl at heart!!

Ingredients
Indian Corn
* 3 ears of corn, kernels cut off the cobb
* 2 cloves of garlic, chopped
* 1 red onion, diced
* A big handful of cilantro, chopped (about a 1/2 cup)
* 15 oz. can of white beans, rinsed and drained
* 1/2 jalapeno, minced
* 2 tsp. ground cumin
* 1 tsp. paprika
* 1 cup of grape tomatoes, halved
* 1 tbsp. butter
Tilapia
* 1 lb. of Tilapia filets
* 1 tsp. paprika
* 1 tbsp. extra virgin olive oil
* Salt and pepper to taste
Directions
Indian Corn
1. Heat a large sauté pan over medium high heat and add butter along with half of the olive oil. Once the butter and oil are hot, stir in onions and garlic and cook about 2 minutes or until fragrant.
2. Next, add in your jalapeno, corn, and some salt and pepper. Bring your heat down to a medium flame and continue to cook for about 4-5 minutes.
3. Finally, stir in paprika, cumin, beans, cilantro, and tomatoes. This will only take another 5-7 minutes to finish up. You’ll know it’s down when your corn is nice and tender! In the meantime:
Tilapia
1. Season Tilapia with salt, pepper, and paprika.
2. In another sauté pan, heat olive oil over medium high flame.
3. Once the olive oil is hot add the fish allowing to cook 2-3 minutes per side or until it is opaque all the way though. Plate your corn and top with Tilapia...Enjoy!!
