Homemade Corn Relish Recipe
This is a very interesting and good recipe of Corn Relish. It is served as a delicious Side Dish. This is the best recipe of Vegetable I have ever made. I am eagerly waiting to know what you think about this Corn Relish. Send me a note!
Ingredients
12 ears corn, husks and silk removed
2 medium-sized green peppers, diced
2 medium-sized red peppers, diced
2 medium-sized tomatoes, diced
2 medium-sized onions, diced
3 cups cider vinegar
1 1/2 cups sugar
4 1/2 teaspoons salt
1 teaspoon celery seeds
1 teaspoon dry mustard
1 teaspoon turmeric
5 1-pint canning jars and caps
Directions
1. With sharp knife, cut enough kernels from corn to make 8 cups kernels.
2. In 5-quart Dutch oven or heavy saucepot over high heat, heat corn and remaining relish ingredients to boiling. Reduce heat to low; simmer 20 minutes, stirring occasionally.
3. Meanwhile, prepare jars and caps for processing
4. Ladle simmering corn mixture into hot jars to 1/4 inch from top. Close jars as manufacturer directs. Process jars in boiling-water bath 15 minutes; cool jars and test for airtight seal
