Corn Oysters Recipe
Ingredients
| Eggs | 2 | |
| 2 cups cooked corn niblets or fresh cut from the cob | ||
| Flour | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| 1/4 tsp freshly ground peer | ||
| A few gratings of nutmeg | ||
Directions
Separate eggs.
Beat whites until stiff, but not dry.
Combine the corn, yolks, flour, and seasonings.
Fold in the whites.
Drop by teaspoonfuls onto a hot buttered frying pan.
Brown and turn once.
