 Eggs2
 2 cups cooked corn niblets or fresh cut from the cob
 Flour2 Tablespoon
 Salt1/2 Teaspoon
 1/4 tsp freshly ground peer
 A few gratings of nutmeg

Directions

Separate eggs.
Beat whites until stiff, but not dry.
Combine the corn, yolks, flour, and seasonings.
Fold in the whites.
Drop by teaspoonfuls onto a hot buttered frying pan.
Brown and turn once.
