Corn Muffins Recipe
Ingredients
1 & 1/2 cups cornmeal
1/2 cup whole wheat flour
2 teaspoons aluminum-free baking powder (Rumford)
1/4 teaspoon salt
1/2 cup honey
1/2 cup molasses
1 egg, lightly beaten
1 & 1/4 cups cow's or goat's milk
1/4 cup butter, melted
Directions
1. Preheat the oven to 400 degrees.
2. Combine the cornmeal, whole wheat flour, baking powder, and salt in a bowl.
3. Add the honey, molasses, egg, milk, and butter. Stir just enough to moisten the ingredients (the batter should be lumpy). Fill well-oiled two-inch muffin tins two-thirds full. Bake for 20 to 25 minutes.
