Corn Meal Biscuits Recipe

These cornmeal biscuits are easy homemade biscuits made with corn and all purpose flour. Prepaerd with a batter of shortening and baking powder, the cornmeal biscuits are good as snacks and can be stored.

Directions

Scald milk.
Combine corn meal, shortening, and salt in a mixing bowl, then stir in the hot milk until mixture is smooth and shortening has melted.
Cool.
Sift flour and baking powder together and stir into cold corn meal mixture.
Dump onto a lightly floured board and roll about 3/4 inch thick.
Cut with a small biscuit cutter, place on ungreased cooky sheet, and bake in a preheated 425° oven for 15 to 20 minutes.
The biscuits have a crunchy "bite" to them.
