Ingredients

 
1 1/2 cups (355 ml) Jicama, peeled and finely chopped
 
1 cup (240 ml) fresh pineapple, finely chopped
 
1 cup (240 ml) whole kernel corn
 
1/2 cup (120 ml) green or red bell pepper, diced
 
1 Dried Habanero Chile, rehydrated and very finely chopped
 
2 tbs (30 ml) Fresh Cilantro, chopped
 
1 clove garlic, minced

Directions

In a medium bowl combine jicama, pineapple, corn, bell pepper, habanero chile, cilantro and garlic.
Process in 2 batches in food processor or blender, using a few stop-and-start motions, for a relish like consistency.
Cover and chill at least 1 hour to allow flavors to blend.
