Snack Time Corn Fritters Recipe
Ingredients
| Eggs | 2 | |
| Milk | 1/2 Cup (16 tbs) | |
| Flour | 1 1/3 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Baking powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 3/4 cup canned cream-style corn, drained | ||
| Red bell pepper | 2 Tablespoon, minced | |
| Canola oil | 2 Cup (16 tbs) (For frying) | |
Directions
GETTING READY
1. Preheat oven to 250° F.
MAKING
2. Using an electric mixer, beat eggs in a bowl to fluffy. Blend in flour, milk, baking powder, sugar and salt and beat to a smooth mixture. With a spoon, add red bell pepper and corn.
3. Take a large deep sauté pan, add 1 inch oil and heat to 375°F.
4. Add scoops of batter to hot oil, just 6 fritters each time, and fry for about 3 minutes, turning halfway through to allow fritters to turn golden brown.
5. With a slotted spoon, transfer to a paper towel and then to an ovenproof platter to retain the heat till being served.

6. Serve hot.
