Corn Fritters Recipe

Ingredients
Salad oil
1 16- to 17-ounce can whole-kernel corn, drained
1 cup all-purpose flour
1/4 cup milk
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
Confectioners' sugar or maple syrup
Directions
1. In heavy saucepan over medium-high heat, heat 1/2 inch salad oil to 400°F. on deep-fat thermometer (or in electric skillet, heat 1/2 inch salad oil to 400°F.).
2. In medium-sized bowl, stir 1 tablespoon salad oil and next 6 ingredients just until blended. Drop batter by tablespoons into hot oil; fry 3 to 5 minutes, until golden brown, turning fritters once. With slotted spoon, remove fritters to paper towels to drain. Sprinkle with confectioners' sugar or serve with syrup.
