Corn Chowder Recipe Video

Ingredients

 
Olive oil
 
White onion
 
2 cloves garlic
 
Pinch of kosher salt
 
Black pepper
 
½ cup minced zucchini
 
Chipotle pepper
 
¼ cup of minced tomato
 
2 cups roasted corn
 
Corn stock
 
1 cup of organic heavy cream
 
Fresh Cilantro

Directions

Pour few tablespoon of olive oil in a heated pan. Add some finely minced white onion, 2 cloves minced garlic; add a pinch of kosher salt and some black pepper. Give a stir to the ingredients.

Add ½ cup minced zucchini.

Add some minced chipotle pepper and

¼ cup of minced tomato and add 2 cups roasted corn. Stir.

Add corn starch and 1 cup of organic heavy cream.

Let the dish simmer for 25 minutes.

Reseason with kosher salt. Add a good bit of cilantro.
