Rich Corn Chowder Recipe
Ingredients
| Potatoes | 2 , chopped | |
| 1 x 450 g. / 1 lb. can sweetcorn, drained | ||
| 300 ml. / 10 fl. oz. chicken stock | ||
| 300 ml. / 10 fl. oz. milk | ||
| 25 g. / 1 oz. butter | ||
| Onion | 1 , finely chopped | |
| 30 ml. / 2 tablespoons flour | ||
| 150 ml. / 5 fl. oz. double cream | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Put the potatoes, sweetcorn, stock and milk into a saucepan and bring to the boil.
Simmer for 10 minutes.
Meanwhile, melt the butter in a frying-pan.
Add the onion and fry for 5 minutes.
Stir in the flour to form a smooth paste.
Gradually add a few spoonfuls of the hot stock.
When the mixture is smooth add it to the soup.
Bring to the boil and simmer for a further 10 minutes.
Stir in salt and pepper to taste and the cream.
