Corn Chili Recipe
Ingredients
| 3 1/4 cups fresh corn cut from cob | ||
| Whole tomatoes | 1 Can (10oz), undrained | |
| Sweet red pepper | 3/4 Cup (16 tbs), diced | |
| Green onions | 1/2 Cup (16 tbs), minced | |
| 1/4 cup canned no-salt-added chicken broth, undiluted | ||
| Water | 1/4 Cup (16 tbs) | |
| 1 tablespoon seeded, minced jalapeno pepper | ||
| Chili powder | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Ground cumin | 1/4 Teaspoon | |
| Oregano | 1/4 Teaspoon | |
| Cilantro | 1/2 Cup (16 tbs), chopped | |
Directions
Combine first 11 ingredients in a large saucepan; bring mixture to a boil.
Cook, uncovered, 20 minutes, stirring occasionally.
Remove from heat, and stir in cilantro.
