Ingredients

 2 tsp plain gelatin
 Cold water1/4 Cup (16 tbs)
 Cornmeal1/2 Cup (16 tbs)
 Oat flour1/2 Cup (16 tbs)
 Brown rice flour2 Teaspoon
 1/4 cup nonfat, noninstant milk powder
 1 1/2 tsp regular baking powder
 Salt1/2 Teaspoon
 Egg1
 Safflower oil1 1/2 Teaspoon
 Honey1 Teaspoon

Directions

Stir gelatin into cold water and dissolve over low heat.
Combine dry ingredients.
Set aside.
Beat egg.
Slowly add oil and honey.
Stir in half of cornmeal mixture.
Add gelatin and remaining cornmeal.
Stir just to mix.
Pour batter into well-greased 7-inch-square pan.
Bake at 350° 30-40 minutes.
Serve warm.
