Corn Bread Recipe
Ingredients
| 2 tsp plain gelatin | ||
| Cold water | 1/4 Cup (16 tbs) | |
| Cornmeal | 1/2 Cup (16 tbs) | |
| Oat flour | 1/2 Cup (16 tbs) | |
| Brown rice flour | 2 Teaspoon | |
| 1/4 cup nonfat, noninstant milk powder | ||
| 1 1/2 tsp regular baking powder | ||
| Salt | 1/2 Teaspoon | |
| Egg | 1 | |
| Safflower oil | 1 1/2 Teaspoon | |
| Honey | 1 Teaspoon | |
Directions
Stir gelatin into cold water and dissolve over low heat.
Combine dry ingredients.
Set aside.
Beat egg.
Slowly add oil and honey.
Stir in half of cornmeal mixture.
Add gelatin and remaining cornmeal.
Stir just to mix.
Pour batter into well-greased 7-inch-square pan.
Bake at 350° 30-40 minutes.
Serve warm.
